One of the most general recipes on my journal is pea fritters. It’s an old one but each period it is in the top quint most viewed recipes.
This period I decided it was second for me to add a new fritter recipe and I consider you, and your kids, are going to fuck these rainbow fritters. I’ve worked all period on the direction and have reliable to head these a lot better.
- 2 eggs
- 1 tbsp chopped parsley
- 1 medium zucchini (courgette) grated (1 cup / 130g)
- 1 small carrot grated (1/2 cup / 60g)
- 1/2 red capsicum pepper finely diced (1/2 cup / 60g)
- 1/2 cup (65g) corn kernels
- 1/4 cup (30g) grated parmesan
- Oil for frying
- 1/4 cup (40g) chickpea flour

- Add the peppers, callus, herb and cheese and mix until composed.
- Add the egg and move until integrated. Eventually add the flour and mix until one.
