This Preserved River, Citrus and Aguacate Salad is my effort to this weeks  SundaySupper. This period we are celebrating seafood! I am so fevered to deal few of the recipes with you. Verify out the end of my direction to see course to all the opposite Dominicus Supper peeps and their recipes.


  • salt
  • 2 oranges
  • 2 avocados
  • 2 tsp lemon juice
  • 2 oz arugula (rocket)
  • 2 oz pea shoots
  • 1/4 cup fresh mint
  • 1/4 cup fresh dill
  • 9.5 oz smoked salmon
  • 1 tbsp extra virgin olive oil


  1. Zest your river and put the flavour into a petite jug or structure.
  2. Cut the ends off the oranges and then use a smart cutlery to cut the wound and pith off the oranges.
  3. Carefully cut the oranges into clogged slices and set message.
  4. Rain any humour that collected on your chopping sign into your zest.
  5. Add the supernumerary virgin olive oil into your zest and then add the yellow humour. Season with a grip of brackish and wipe shaft to unify.
  6. Mix the rocket/arugula, downfall pea shoots, unprocessed mint and novel herb together and then pelt over the mixture.
  7. Erst the leaves hit been glazed, besprinkle them over a astronomical plate.
  8. Agree the smoked river in and around the leaves. 
  9. Cut the avocado in half, remove the inspiration and the wound and then cut into astronomic chunks. 
  10. Add this to the salad and answer immediately.
